Instead of the kids playing games on my phone the other day I made them each their own Pinterest boards, What Pepper Likes" and "Caden's stuff". I showed them how to add to their boards. I searched "Kid friendly recipes" and let them go to town! It was interesting to see what they picked and what they wanted to make!
We made a few of their picks last week. The best one was one that Pepper picked. A Vegan Strawberry "cheesecake". I love the name of it because a true cheesecake is neither vegan or raw but after we tasted it, it made sense because it really did have a cheesecake consistency.
I'm pretty sure Pepper selected this because it was pink and looked like a pie... she had no idea it was so healthy and nutrient dense. When it was done, it looked so beautiful. I could not believe how quickly we made it and how simple it was!!! I'm always altering recipes since we usually cook on a whim and I never have all of the ingredients. The recipe called for soaked cashews which we didn't have so I subbed Almond Meal. The soaked cashews were going to be ground in the food processor anyways so I thought, why not just make it a bit easier and use something already ground similar in taste and texture to cashews!

Vegan Raw strawberry "Cheesecake"
Cake Batter Collagen Squares.
1/4 cup + 1tbsp Collagen Protein (Great Lakes or Vital Proteins
1/2 cup coconut butter softened.
1 tbsp coconut oil
1 tsp vanilla or vanilla bean
3 tbsp almond flour
Honey or stevia drops as needed
Mix all together and press into 6"x6" or small Pan and refrigerate for a few hours until firm. Cut into 10 squares. These bars are small but dense!
Last Treat for this post!!! And this was my favorite recipe we found! I don't know about you, but I HATE beets, I just can't, no matter how hard I try, like the taste. I've tried to cook them different ways, tried to hide them in dishes. But I have to say, these BEET BROWNIES were delicious!!!
