This past week FLEW by combined with being out of town for the weekend I didn't plan on and preparation for meal prep Sunday. This happens when the old schedule gets out of whack... but that's life and we had a great getaway weekend!!
Since my birthday is tomorrow I spent my time in the kitchen Sunday of course, baking myself TWO cakes. I told my husband and kids I wanted them to make and decorate a cake for me for my birthday this year...
So they did just that!... well, sort of. I ended up baking the cake, I used my delicious vanilla cake recipe that I use for my decorated cakes
(I can't give that recipe away!) but my husband is celiac and we try to eat Gluten-Free. I found a great cup-for-cup flour substitute chart for baking that keeps the texture just right for this cake!! You can tell this paper chart I keep in my draw has been put to good use. This is what I use in place of white flour for an awesome texture!
So I decided I would eat some of the "regular sugar-filled cake" but I always like to experiment and make paleo-ish recipes and lower sugar treats. So, of course I baked myself a Paleo Chocolate Cake! Click here to find the recipe I used.
